Keep it simple
We eat a lot of our veg fresh from the plants as we work and with our daily lunchtime picnic. When veg does make it as far as our kitchens we like to cook it quickly and simply to preserve its flavour and nutrition.
Here are our favourite easy ways with our staple crops, along with links at the bottom to more unusual recipes for greens.
TWO QUICK & DELICIOUS METHODS THAT WORK WITH ALL KALES, RAINBOW CHARD & MOST OTHER GREENS, AS WELL AS BROCCOLI, BEANS & MANGE TOUT:
Steam or boil briefly (stop cooking before they lose their bright colours), serve with a knob of butter.
Chop roughly, fry for 5-10 mins in sesame oil and garlic with a lid on to keep moisture in, then drizzle with soy sauce.
